Quinoa, Avocado & Egg Bowl

Literally the simplest and easiest healthy food bowl! My quinoa, avocado and egg bowl combination is definitely one to try. Mostly because it’s so easy to pull together – but also because it looks so “zen”.

Unless you’ve been living under a rock the past few months, you’d know that “bowl food” is a huge food trend these days. I see it all over my Instagram feed – healthy deconstructed-style food bowls made with tons of veggies, healthy grains and a protein.

This one I threw together in pretty much 2 minutes – or as long as the egg took to cook. I already had cooked quinoa in the fridge because I love using it for my packed work lunches (usually with chicken and veg). If you’d like to go to a little more effort, instead of using raw cherry tomatoes – roast them in the oven for around 30 minutes until they are wonderfully caramelised and delicious.

A delicious and healthy bowl of quinoa, avocado and egg - under 400 calories!
  • 100g cooked quinoa
  • ½ an avocado, chopped
  • 10 cherry tomatoes (raw or roasted for 30 minutes)
  • 1 fried egg
  1. Measure out all the ingredients, cook the egg and tomato if needed.
  2. Combine in a bowl.
  3. Season with salt and pepper.
  4. Serve!
