Ahhhh I love those dishes you can make with your eyes closed – and this roast veg no calorie salad definitely makes the cut!
What I love about the no calorie noodle range, is that they are instantly ready. Like poof! Your pasta is ready. No cooking required.
I’ll be honest – you might think they are weird when you first open the packet. But if you’re one of those “with it” people who frequent health shops on a weekly basis, then they shouldn’t scare you too much. I think originally, pasta was used to bulk up a meal to make it more substantial – and to make money go as far as possible. Eventually, however, pasta became the lover of foodies all over the world. The stuff is so delicious! But when you think about it, it’s only as good as the ingredients that come with it.

But if you’re trying to lose weight – or struggle to lose weight – you might want to lay off the pasta. Okay, some people have the impossible ability to eat pasta in moderation, but I am not one of those lucky souls. It’s honestly like blood to a shark: I just can’t stop!
Of course, I don’t deprive myself all year round – but summer season is coming up and I don’t want someone to be yelling “whale” when they spot me on the beach.

Now, don’t fall off your chair – but this ENTIRE Roast Veg No Calorie Rice Salad comes in at a lightweight 352 calories!!!!! I made it for my family as a side dish that fed 4 people! That’s crazy.
If you’d like a full-on meal, add some chicken strips – but you might want to make a smaller portion. I roasted a whole tray of mixed vegetables, so maybe reduce that by half if you’d like lunch for one 😊

- 1 baking tray mixed vegetables, chopped (see note)
- 1 tbsp olive oil
- ½ round of feta (30g)
- 1 packet No Calorie rice pearls
- For the dressing:
- 2 tbsp tomato paste
- 1 tbsp olive oil
- ¼ tsp chili flakes
- ½ tsp paprika
- ½ tsp oregano
- ½ tsp cumin
- pinch of salt
- Preheat the oven to 180 degrees Celsius.
- Place the mixed vegetables on a baking tray, drizzle with 1 tbsp olive oil and roast in the oven for 30 minutes.
- In the meantime, prepare the dressing by combining all the ingredients.
- When the roast vegetables come out the oven, allow to cool slightly before adding the dressing.
- Crumble over the feta and garnish with fresh basil leaves (optional).
