This week, I put together a wonderful 3-course meal idea for you guys! I think itโ€™s a good idea to sometimes up your cooking-game and put a little more effort into dinnertime โ€“ even if itโ€™s once a month or so ๐Ÿ˜Š

“3 Course” sounds super daunting, right? Like Masterchef vibesโ€ฆbut trust me โ€“ itโ€™s a LOT easier than you think. It wonโ€™t have you slaving in the kitchen cooking all day longโ€ฆif you plan properly, that is. I always advise people to make things as easy as possible by choosing food that can be cooked in advance. Youโ€™ll be relaxed and unrushed while cooking, which will probably produce better results AND a 3-course meal definitely calls for a special social evening. Even if itโ€™s just you and your significant otherโ€ฆor you and your best friend. If you put some effort into preparing the meal in advance, you will have time to enjoy the evening and relax โ€“ which means youโ€™ll probably want to do this type of thing more often.

For Starters: Cozy Roasted Butternut and Red Onion Soup

This is the perfect starter! You can make it the day before and just warm it up when you need it. Sounds so delicious right?! Plus โ€“ you donโ€™t have to feel guilty about having 3 meals at once, because this starter contains only 147 calories per serving for a BIG portion ๐Ÿ˜Š

For Mains: Easiest Honey Glazed Roast Chicken

Roast Chicken is probably your best bet in terms of EASY. I recommend cooking this on the day โ€“ but the beauty is that you pretty much just chuck all the ingredients on a roasting pan, pop it in the oven โ€“ and forget about it for 1 ยฝ hours ๐Ÿ˜Š To make things even easier, prepare everything before your guest/s arrive so that you can just pop it in the oven when the time is right.

For Dessert: Sugar-Free Chocolate Muffins with Strawberries and Cream

SUGAR-FREE Chocolate Muffins


To end off your amazing 3-course meal โ€“ cook up these absolutely GUILT-FREE chocolate muffins to enjoy with some fresh strawberries and cream. No sugar in sight but youโ€™ll satisfy your sugar craving ๐Ÿ˜Š I would recommend baking these muffins the day before to intensify the chocolate flavour.
