This past Sunday, I was at my parent’s house in good old beautiful Hermanus for the Whale Festival – so my mom and I were doing our usual prep for the braai that afternoon. As you know – we are regular “braaiers” and run on well-oiled wheels when it comes to this. The problem though, is the comfort zone “rut”. You know – making the same salad, same veggies, with the same boring rolls and meat EVERY WEEK. At least I can do this with my eyes closed since birth…but sometimes I feel like something a little different. So I decided to mix it up and make cheesy stuffed gem squash!
Background story: I love them! My mom always used to make them with a little butter and sweetcorn which was simply DEVINE! So simple – yet absolutely delicious!
However, for the purpose of – you know “health” and all – I decided to stuff them with a better alternative: healthy veggies and black beans, and instead of butter à reduced fat cheese! Sounds good yet?
Furthermore, gem squash is a fantastic healthy carbohydrate substitute as it only contains 25 calories per 100g (or 1 cup)! Plus – it is low in fat, sodium, and cholesterol and high in nutrients and vitamins like Vit A, C and K. Whoop whoop!
How to make Stuffed Gem Squash
The Stuffing Mixture = Raw corn, black beans, and chopped peppers
Add seasoning and 1/4 tsp dried chili flakes (optional).
Gem Squash Halves – seasoned and a TINY knob of butter (optional)
Into the oven @ 180 degrees for 20 minutes.
Add stuffing – then back into the oven for 20 minutes.
Remove and add grated cheese – and back into oven until cheese has melted (5-10 min)
Cheese Melted – DONE!
