Strawberry,Avocado & Goats Cheese Salad

Let me be honest – I was surprised how well this combination of strawberry, avocado and goats cheese worked. Especially, because I am not the biggest fan of adding fruits to salad – unless it is ONLY fruit – and it’s for breakfast.

It was delicious!

I wanted to try something different (outside of my usual rut – especially when it comes to salads. It tends to be the neglected party in my life because I’m always more focused on the mains, and tend to stick to: cucumber, lettuce, tomato, avo, feta and pretty much everything I can find in my fridge. There’s never any plan!

But I’ve come to realize that salads are a so versatile! And the absolute BEST healthy packed lunch! When the salad becomes the main meal, YOU HAVE TO PAY ATTENTION! Because you’ll only feel satisfied by a salad if it’s absolutely worthy of the word “awesome”.

So here I combined flavours, textures AND colours! Personally, colour is almost the most important because somehow everything tastes better when it LOOKS amazing. Below you can see how I combined the greens with that wonderful pop of red from the strawberries. Next – TEXTURE! The avocado and goats cheese add that satisfying creaminess – which is offset by the addition of crunchy chopped pecan nuts. Last but not least – the flavour!! Maybe a bit strange…but absolutely wonderful! Savoury flavours from the cheese, pecan nuts and avocado – combined with sweet flavours from the strawberries, radishes and balsamic reduction. And the radishes add a bit of a bite too 🙂 So good!

A wonderfully fresh, easy and low calorie salad recipe.
Ingredients
  • 1 cup baby spinach
  • 6 strawberries, cut in quarters (100g)
  • ½ avocado, chopped
  • 1 small radish, thinly sliced
  • 30g chevin goats cheese, roughly chopped
  • 2 tbsp pecan nuts, chopped
  • 1 tbsp balsamic reduction
Instructions
  1. Combine all the prepared ingredients.
  2. Drizzle the balsamic reduction over the salad at the end.
  3. Serve!
