Asian Stir Fry with ZERO Calorie Noodles

The day I discovered ZERO calorie noodles…oh my goodness…I thought: “Best invention. EVER!” I was curious about them, thinking maybe they tasted disgusting. Obviously, I bought them – took them home – and cooked something that I could add them to immediately. And I was surprised…they didn’t taste disgusting! What a score! They basically just absorbed the flavour of whatever you cooked them with, and added some bulk to the dish – and pseudoCARBS (happy dance!).

The next thing I thought was: hmmm zero calorie noodles probably contain some dodgy ingredients?!! I read the label…and nope – just plain glucomannan (gluco-WHAAAAT???).

Google “Glucomannan”, and you’ll find a bunch of links relating to weight loss and “best weight loss supplement”. It is a sugar made from the root of the konjac plant, and is said to fascilitate weight loss and treat constipation, type 2 diabetes, cholesterol and balance blood sugar levels. As a weight loss supplement, it can be very useful because it absorbes water in the gut, reducing apetite and promoting satiety. DOUBLE SCORE! At this point, I was like: “Let me just make everything with these fabulous noodles!!”

 

Okay, so now you’re thinking:

FOR GOODNESS’ SAKE! WHERE DO I GET THESE ZERO CALORIE NOODLES???

Asian Stir Fry with ZERO Calorie Noodles

A delicious yet absolutely guilt-free Asian stir fry...with ZERO calorie noodles!
Ingredients
  • Pick ‘n Pay Oriental Stir Fry veg – 100g
  • Mushrooms – 60g
  • Chicken strips – 1 breast/130 grams
  • Woolworths Easy to Wok Stir fry sauce, honey and ginger – ½ a 125ml packet
  • No Calorie Noodles, Angelhair – 1 bag
  • (Optional: ⅓ cup corn – add 45 calories; 9.5g carbs; 0.5g fat; 1.4g protein)
Instructions
  1. Sauté the chicken strips in a few tablespoons of bubbling water until golden.
  2. Remove from the pan and set aside.
  3. Cook the mushrooms in the same pan in the same manner until cooked.
  4. Remove from the pan and set aside.
  5. Open the noodles and decant into a sieve. Rinse under cold water and set aside.
  6. In a wok, cook the stir fry veg on a high heat – stirring continuously (if necessary, add a dash of water).
  7. Add the optional corn – keep stirring.
  8. When the veggies look cooked (after around 7 min), add the mushrooms and chicken.
  9. Add the noodles and the stir fry sauce.
  10. Mix thoroughly – the mixture should not be too watery (a big wok and high temperature helps with this).
Notes
You can also fry the chicken in a little coconut oil. The water can also be replaced with chicken stock.
