Last week I made a delicious and hearty Mexican Bean Ragu (you can check out the recipe below). I love having it with smashed sweet potatoes! So good, deeply fulfilling – AND LESS THAN 400 CALORIES!
I’m aware beans don’t always look very appealing, but I’m sure you’ll agree that my Smashed Sweet Potatoes look pretty tasty 😉 I grate some cheese and sprinkle it on top of the smashed sweet potato, then add the hot bean ragu over it so that the cheese melts and becomes all stringy and ooey-gooey. Add a nice drizzle of double cream plain yogurt and a sprinkle of fresh coriander to tie it all together! The yogurt adds a tangy element that is just LOVELY!
In my opinion, eating is all about the EYES. No one wants to eat something that looks like the dog’s breakfast! So my advice to you (in any healthy-eating situation)…is go to a little extra effort to make your food LOOK good. You will find that eating healthy, nutritionally DENSE foods aren’t always that appealing. I mean – think diet food: a plate with plain steamed vegetables and a piece of dry chicken breast. YUCK! Now think about a big saucy burger with cheese, bacon and crispy fresh lettuce and tomato on a fresh sesame seed bun…with crispy fries on the side. Definitely something that gets me salivating! Now, my challenge to all of you is to make HEALTHY food look as great and mouth-watering as that hamburger. Quite a challenge…but certainly not outside the realm of the POSSIBLE.
Take these smashed sweet potatoes for example…they would not have looked NEARLY as appetising if I hadn’t added that nice drizzle of yogurt. They would have looked like a big brown mess! All I did, was put some yogurt in a Ziploc bag, snip off the end, and drizzle the yogurt over the top. A small amount of extra effort, to make a HUGE visual difference 🙂 The result was that I got people who aren’t too keen on beans…to eat the meal with enthusiasm! Mission accomplished!

- Serving size: 1 smashed sweet potato
- Calories: 382

- ½ cup Hearty Mexican Bean Ragu (follow link on site)
- 1 medium sweet potato (about 240g raw), boiled about 20 minutes
- 30g reduced fat mozzarella, grated (I find it at Woolworths)
- 1-2 tbsp. double cream plain yogurt
- salt and pepper to taste
- garnish with fresh coriander leaves
- Smash the boiled sweet potato with a potato masher (only slightly as shown on photo).
- Next sprinkle the cheese on top.
- Next add the bean ragu (must be warm).
- Drizzle the yogurt over the sweet potato (I use a Ziploc), and garnish with fresh coriander.
- Add salt and pepper if desired.
