LESS THAN 400 CALORIES: Asian Chicken Salad

Asian Salad Cover

Meet one of my newest favourites!

Not too long ago, I found myself having lunch with a dear friend at Woolies Café at Canal Walk. Both of us ordered the same salad (I was probably feeling guilty from a recent indulgence…or in fact, I probably wanted to order a massive slice of cheesecake for desert – my weakness). It was a roast chicken salad with lots of avocado and sweet chili dressing and I absolutely adored it!

Anyway, long story short – I wanted to recreate this salad with a few simple tweaks of my own… I wanted to make it healthier!

Below you will find the recipe…it’s VERY EASY (so easy!). If you want to make this salad even easier to make: buy cooked rotisserie chicken breasts from Woolies. All that’s left to do is sauté some broccoli in a pan for 3 minutes! The rest of the ingredients only need to be sliced, and arranged…AND PRESTO YOU’RE DONE 🙂

This HIGH PROTEIN salad is a fantastic healthy lunch option and works well as a packed work lunch too!

And did I mention it contains LESS THAN 400 CALORIES?! Double yay! 🙂 🙂 🙂

Star players: the chicken and the avocado!!

Round of applause to Woolworths for the inspiration!

Serves 1

Asian Chicken Salad

Roast Chicken – 1 breast or 130g

Avocado – half a ripe avocado, or more if you wish

Tenderstem Broccoli – 65g (a small bag from Woolworths)

Radishes – around 2 radishes thinly sliced (16g/2tbsp)

Pickled Ginger – 1 heaped tbsp (16g) (try save the free ones you get with sushi)

Mixed Greens – a handful or to taste, I like ones with watercress and baby spinach

Optional – sprinkle of sesame seeds (1/2 tsp)

Sweet chili sauce – Carb-smart sweet chili sauce as a dressing (around 4 Tbsp)

Note: The radishes, ginger, and sweet chili sauce is TO TASTE…so add more or less depending on your preference 🙂

  1. Sauté the broccoli in a pan with a drizzle of olive oil until cooked but still crunchy (3-4 minutes). Set aside.
  2. Arrange greens on one side of a dinner plate.
  3. Slice avocado, and finely slice radishes.
  4. Tear the ginger into smaller pieces using your fingers.
  5. Slice chicken breast.
  6. Arrange broccoli, radishes and ginger on top of greens. Follow with avocado and chicken slices.
  7. Optional: sprinkle with sesame seeds.
  8. For the sauce: squeeze sweet chili sauce into a ramekin and arrange on the side of the plate. Optionally, add a little vinegar to make the sauce more ‘runny’.
